Unique to Tasmania, certain parts of Australia and New Zealand, Manuka Honey is regarded as one of the world's most expensive honey. It is a special type of mono-floral honey which is produced by bees that gather nectar from the flowers that grow on the Manuka bush (also known as Leptospermum scoparium).
Studies have found that Manuka Honey contains very powerful antibacterial, antimicrobial, antiviral, antioxidant, antiseptic, anti-inflammatory and anti-fungal properties. Methylglyoxal is a compound identified as the active ingredient responsible for the anti-bacterial action of Manuka honey. The higher the Methylglyoxal level, the greater the antibacterial effect it has.
Eat it on its own or mixed with lukewarm or cold water and stir with a non metal spoon.

Pour 80°C water with 2g of matcha powder in a cup & ginger powder and stir. After it is cooled, add the Manuka honey and it is ready to drink!
